Ingredients:
1 package Pamela’s Biscuit & Scone Mix
6 tbsp. butter (¾ stick), cold
2 tbsp. shortening, cold
1 ¼-1 ½ c. buttermilk
1 c. shredded mild cheddar cheese
2 tsp. garlic powder
2 tsp. dried parsley
1 tsp. onion powder
½ tsp. Old Bay seasoning
½ tsp. salt
¼ tsp. black pepper
Garlic butter:
2 tbsp. butter, melted
1 ½ tsp. garlic powder
2 tsp. parsley
½ tsp. Old Bay seasoning
¼ tsp. salt
Directions:
1. Preheat oven to 350°. Line two sheet pans with parchment paper. In food processor or processor bowl of wide-base blender, pulse biscuit mix, butter, and shortening until fats are evenly distributed. Dump into large mixing bowl.
2. Add buttermilk (start with 1 ¼ c., add more if dough is too dry), cheese, garlic powder, parsley, onion powder, Old Bay, salt, and pepper to mixing bowl. Fold in with rubber or silicone spatula until just combined.
3. Drop biscuits onto prepared sheet pans while dough is still cold. If dough warmed during mixing, stick bowl in refrigerator and allow to set up for 15 minutes before panning and baking.
4. Bake 15 minutes. While baking, prepare garlic butter by melting 2 tbsp. of butter in the microwave in a mug, and mixing in garlic powder, parsley, Old Bay, and salt. After 15 minutes, pull biscuits from oven, brush with garlic butter mixture, and bake another 5 minutes.
5. Pull finished biscuits from oven, and allow to cool 1-2 minutes before serving.
That’s it. A super-easy side, basic ingredients and methods, and delicious enough that you’ll eat half a batch yourself before dinner even hits the table because who possibly possesses the kind of self-control necessary to resist? Come on, I know I’m not the only one.
Oh, and a quick note about brushes: natural fiber brushes hold the garlic butter best and apply it more easily, but they’ll hold onto the garlic flavor forever, and may drop some of their fibers into your food. Silicone brushes won’t hold or apply the butter as well (as demonstrated in my video), but are easier to clean and don’t hold onto flavors. If garlic butter is the only thing you would ever use a brush for anyway, then go ahead and get a natural fiber brush. If you might use it for pie crust egg washes or brushing rum onto a cake top, then stick with the silicone, and maybe find a brush with more bristles than my cheap Walmart brush. Shorter bristles will also give you more control.
Serve alongside seafood (it does get its name from the inclusion of Old Bay seasoning), whether it’s baked salmon, fried oysters, or even bring as a side dish at the next family shrimp boil. You could also cut in half, place each slice cut-side up on a baking sheet, layer sliced ham and cheese on both sides, warm under the broiler for a few minutes, and then smush the halves back together for a delicious cheesy biscuit sandwich.
